How to:
1.
To make the hummus: add chickpeas, tahini, fresh garlic, lemon juice, olive oil, cumin and salt to a food processor or blender and blend on high for 1 minute, adding the water in stages throughout. The final texture should be smooth, thick and fluffy. Scrape the hummus into a bowl and set aside.
2.
To make the zhug: add parsley, cilantro, jalapenos, olive oil, lemon juice, garlic powder, cumin, cardamom, black pepper and salt to the food processor or blender and blend on high for 30 seconds to 1 minute. The final texture should be thick and pourable, but not watery.
3.
To assemble each crispbread: spread 2 tablespoons of hummus over the top followed by a spoonful of zhug (and if you don’t use all of either, store them in the fridge for later – the hummus should last three to four days, and the zhug for at least a week!). Finish with squeeze of lemon juice and garnish with lemon zest.
