Oyster Mushrooms Meets Fennel

CREAM CHEESE 3 TABLESPOONS
PARMESAN 20 GRAMS
LEMON 1
SALT TO TASTE
PEPPER TO TASTE
FENNEL 1
OLIVE OIL A SPLASH
FLAKE SALT A PINCH
ROASTED ALMONDS 60 GRAMS
CRISP BREAD 3 PIECES
CHILLI FLAKES TO TASTE
METHOD
1.
Start with putting the cream in a bowl and then use the thin sized side when grating down the parmesan and the lemon peel. Now mix cream cheese, the grated parmesan and the lemon zest. Add lemon juice, salt and pepper. Set aside.

Shave down the onion with a mandoline into a bowl and squeeze the lemon juice and a pinch of flake salt. Massage the juice to soften the onion. Let sit while preparing the mushroom. Before assembly, mix the chopped parsley and the onion.

Start by peeling the oyster mushroom into stripes. Heat up your frying pan and when it reaches inferno -add oil, then the mushroom. You might want to add more oil since mushrooms are known for their thirstiness. Salt and fry until a crispy texture. When the mushroom has reach the desired color, add the thinly diced onion and stir it up for half a minute and set aside.

Shave down the fennel thinly with a mandoline before serving. Dress it with olive oil and flake salt.

Crunch and mix all ingredients into a nice crunch and sprinkle over the assembled sandwich.

Spread a layer of cheese and lemon cream on the crisp. Add small amount of onion and parsley. Add the fried oyster mushroom. Add the thinly sliced fennel. Sprinkle the nice amount of crunch on top. Finally top with a bit of fresh chervil.
