Vegan Tuna Salad

Wasa Original is a slightly thinner and crispier rye crispbread. It has a more powerful taste than, for example, Husman. Also known as Rågi in Sweden, Roggen Dünn in Germany and Authentuque in France.

INGREDIENTS
2 CANS OF CHICKPEAS (RINSED AND DRAINED)
1 DL VEGAN MAYONNAISE
1 LARGE CARROT1 SCALLION
1 SMALL RED ONION
1-2 TBS LEMON JUICE
1 TSP DRIED DILL
½ TSP SALT
½ TSP BLACK PEPPER
OPTIONAL TOPPINGS: LEMON SLICES, RED ONION SLICES, FRESH DILL
METHOD
1.
Pulse the chickpeas in a food processor. Leave some chunks.
2.
Put the mashed chickpeas in a bowl.
3.
Shred the carrot, finely chop the scallion and the red onion and add to the bowl.
4.
Add the other ingredients and combine with a spoon.
5.
Put a big pile of it on one or two Wasa crisp breads (such as Husman/Vollkorn) and top with fresh sliced red onion, fresh dill and a slice of lemon for a savoury lunch or light dinner.
