1/4 CUP ROLLED OATS
1 TABLESPOON NUT OR SEED BUTTER
1 TABLESPOON MAPLE SYRUP OR HONEY
1/4 TEASPOON GROUND CINNAMON
1/8 TEASPOON SALT
1/2 TEASPOON VANILLA EXTRACT
1/4 CUP CHOPPED/SLIVERED ALMONDS
2 TABLESPOON UNSWEETENED COCONUT FLAKES
2-4 TABLESPOON SEEDS (PUMPKIN, FLAX, SUNFLOWER, ETC.), DRIED FRUIT OR CHOCOLATE CHIPS (OPTIONAL)
FOR THE PARFAIT: 1 CUP PLAIN OR VANILLA GREEK YOGURT (OR A DAIRY-FREE ALTERNATIVE)
1/2 CUP FRESH STRAWBERRIES, SLICED
1/2 CUP FRESH BLUEBERRIES
1/4 CUP FRESH RASPBERRIES
1 TEASPOON HONEY OR MAPLE SYRUP (OPTIONAL, FOR EXTRA SWEETNESS)
How to:
1.
For the Granola: Preheat your oven to 325 degrees Fahrenheit and line a baking sheet with parchment paper.
2.
In a medium mixing bowl, add the maple syrup, nut butter, vanilla extract, cinnamon, and salt and mix well. Then, add the crumbled Wasa Cinnamon Crisp Creations, rolled oats, chopped nuts/seeds, and coconut flakes. Stir together until the dry mixture is evenly coated.
3.
Spread the granola mixture evenly onto the prepared baking sheet. Bake for 12-14 minutes, stirring halfway through, until golden brown and fragrant. Watch closely to avoid burning.
4.
Remove the granola from the oven and let it cool completely on the baking sheet. Once cool, mix in the dried fruit and/or chocolate chips. Save homemade granola in an airtight container and enjoy for up to 3 days after making.
6.
Assemble the Parfaits: In two serving glasses, bowls, or mason jars, add a layer of yogurt at the bottom. Top with a layer of fresh strawberries, blueberries, and raspberries. Sprinkle a layer of the homemade granola over the berries.
7.
Repeat the layers until the glasses are filled, ending with a generous sprinkle of granola on top. Drizzle with honey or maple syrup if desired.
