Thanksgiving Spread Crispbread

Ingredients
8 WASA WHOLE GRAIN CRISPBREADS
2 BONELESS, SKINLESS TURKEY BREASTS
1 TABLESPOON OLIVE OIL, DIVIDED
1 TABLESPOON DRIED SAGE
1 TEASPOON SALT, DIVIDED
1 TEASPOON PEPPER, DIVIDED
4 MEDIUM-SIZED YUKON GOLD POTATOES
2 CUPS FRESH GREEN BEANS
2 TABLESPOONS BUTTER
2 TABLESPOONS FLOUR
1 CUP CHICKEN BROTH
1/4 TEASPOON ONION POWDER
3/4 CUP MILK (COW’S MILK OR NON-DAIRY ALTERNATIVE)
1 TABLESPOON BUTTER
2 CLOVES GARLIC, MINCED OR PRESSED
8 SPRINGS OF FRESH THYME, FOR GARNISH
8 SPRIGS OF FRESH ROSEMARY, FOR GARNISH
How to:

Preheat oven to 375° F and line a large baking sheet with parchment paper.

Pat turkey breasts dry and place on one side of the baking sheet. Brush with 1/2 tablespoon of oil and season with dried sage, 1/4 teaspoon salt and 1/4 teaspoon pepper, coating both sides.

Using a fork, poke a few holes into each side of your potatoes. Line them up on the baking sheet’s opposite side.

Bake turkey breasts and potatoes together for 40 minutes.

While the turkey and potatoes bake, prepare the gravy. Start by adding butter to a medium saucepan over medium heat. Once it melts, add 1 tablespoon of flour at a time, whisking to combine. Cook for 30 seconds – 1 minute, then add chicken broth, onion powder, 1/4 teaspoon salt and 1/4 teaspoon pepper. Continue whisking until gravy reaches desired consistency, about 8-10 minutes. Transfer to a separate container to cool.

Take turkey and potatoes out of the oven after 40 minutes and add green beans to the baking sheet, making room between the turkey and potatoes. Drizzle with 1/2 tablespoon of olive oil and season with 1/4 teaspoon salt and 1/4 teaspoon pepper. Put the whole baking sheet back in the oven for an additional 20 minutes.

Once everything is done (make sure the turkey’s internal temperature is at least 165° F and the potatoes are soft), transfer potatoes to the same pot you used to make your gravy and add milk, butter, garlic, 1/4 teaspoon salt and 1/4 teaspoon pepper. Mash with a fork or potato masher.
8.
To serve: Add a layer of creamy mashed potatoes to a Wasa Whole Wheat crispbread and top with a few green beans, a thin slice of turkey, a dollop of gravy and a sprig each of fresh rosemary and thyme.
