Shakshuka with Wasa Whole Grain Crispbreads

Ingredients
8 WASA® WHOLE GRAIN CRISPBREADS
1 TABLESPOON OLIVE OIL
1/4 CUP YELLOW ONION, DICED
1/4 CUP RED BELL PEPPER
3 GARLIC CLOVES, MINCED
1 TEASPOON CUMIN
1 TEASPOON PAPRIKA
SALT AND PEPPER (TO TASTE)
1 CUP OF PEELED TOMATOES (AND ITS JUICE), FINELY CHOPPED
2 EGGS
1 TABLESPOON GOAT CHEESE, CRUMBLED
FRESH CILANTRO, CHOPPED
FRESH PARSLEY, CHOPPED
How to:

Using a medium-sized cast iron skillet, heat the olive oil on medium heat for 30 seconds, coating the base of the pan. Add the yellow onion and red bell pepper, sautéing for about 3 minutes before adding the garlic, cumin, paprika, salt and pepper. Cook until the onions turn translucent, then stir in the peeled tomatoes and juice, simmering for 5 minutes and stirring occasionally.

Using a spoon, create two wells (or holes) in the sauce and crack an egg into each. Cover the skillet with a lid and simmer until the egg is cooked through, approximately 6 minutes. Remove the lid and take the skillet off the heat.

To serve, garnish the Shakshuka with goat cheese crumbles, fresh cilantro and parsley, and additional black pepper to taste. Use Wasa Whole Grain crispbreads as a vessel to enjoy.
